Sausage, Broccoli & Sweet Potato Noodle Skillet

We made this tasty skillet dinner with Italian turkey sausage, sweet potato noodles, and broccoli. It was our first time trying sweet potatoes with our spiralizer - we have tried zoodles (zucchini noodles) but nothing else. It was so yummy! 😍 Jerry was skeptical, but he scarfed down his bowl in record time. 😜 Try it out and let me know what you think! Ingredients: 2 Tablespoons extra virgin olive oil 1 pound Italian turkey sausage 2 medium sweet potatoes, spiralized 2 cups chopped broccoli salt and pepper 2 cloves garlic, minced 1/4 cup low-sodium chicken broth 1/2 cup shredded parmesan cheese Directions: 1. Heat 1/2 Tablespoon oil in a large skillet over medium-high heat. Add sausage then brown, breaking it up as it cooks. Drain and set aside on a plate. 2. Turn heat down a touch then add remaining 1.5 Tablespoons oil to the skillet. Add sweet potato noodles and broccoli then saute, tossing gently with tongs, until the noodles are almost al dente, about 5 minutes. Add garlic then saute until fragrant, 30 seconds. Add chicken broth then continue to saute until noodles are al dente/crisp tender, 1-2 minutes. 3. Add parmesan cheese and sausage and toss to combine. Scoop onto plates then top with more parmesan cheese, if desired, and serve.
