Chicken Cauliflower "Fried Rice"
Ingredients
1 medium cauliflower head - pulse in your food processor (OR you can buy a bag of pre-diced cauliflower - much easier!) 2 large eggs 3 cloves garlic, minced 1/2 cup diced green beans, fresh or frozen 4 green onions, thinly sliced 1/2 cup chopped mushrooms
1/4 cup diced white onion
1 large chicken breast (grilled or baked, then diced)
2 to 3 tablespoons soy sauce (or more if you aren't watching your sodium)
Directions
1. Whisk the eggs and pour them into a skillet. Quickly scramble the eggs over medium heat. Transfer the eggs to a cutting board and chop into pieces.
2. Wipe the skillet clean and warm 1 tablespoon of vegetable oil over medium-high heat. Add the garlic and sauté until fragrant, about 30 seconds.
3. Stir in the green beans and sauté until crisp-tender, 2 minutes.
4. Stir the cauliflower "rice" into the pan, mixing the ingredients thoroughly. Lower the heat to medium, cover the pan, and cook until the cauliflower is tender, 5 to 8 minutes.
5. Uncover and stir in the chicken, eggs, green onions, mushroom, onion, and 2 tablespoons soy sauce. Add more soy sauce to taste.
Serve immediately. Leftovers will keep refrigerated for several days.
