Teriyaki Chicken & Cauliflower Rice
My Bikini Bootcamp is in full swing! A week of clean eats and fun workouts? #yesplease ๐๐ผ๐ Tonight's dinner was Teriyaki Chicken with Cauliflower Rice, and it did not disappoint! The best part? It can be made in the crockpot while you're at work. Boom! ๐ค Here's the recipe - try it out!
Serves 4 - (Crockpot Recipe)
Ingredients:
1 lb. Boneless Skinless chicken breast
1 clove garlic
1 tbsp. Fresh ginger
1 Green onion
3 tbsp Raw Honey
1/2 cup Braggs Liquid Aminos
3 tbsp. Brown Sugar (Truvia blend)
1 tbsp Cornstarch
3 tbsp Rice Vinegar
2 tbsp Water
Riced Cauliflower (I get the frozen bag)
Directions:
1. Place chicken in bottom of crockpot.
2. In a medium bowl, whisk together liquid aminos, rice vinegar, honey, brown sugar, garlic and ginger. Pour over chicken.
3. Cover and cook on High for 2 hours or Low for 4 hours, or until Chicken is done.
4. Remove chicken and chop up.
5. Mix cornstarch and water, add to liquid in crockpot, stir together on high heat.
6. Add chopped chicken back in and toss together with sauce. Top with green onion and serve over cauliflower rice!
