Chicken Fajitas
Chicken Fajitas (4 servings)
1 tsp chili powder
1/2 tsp himalayan (or any) salt
1/4 tsp ground cumin
1/2 tsp garlic powder
2 tsp olive oil (divided use)
4 (5-6 oz) raw chicken breasts cut into 1/2 inch strips
1 medium red or green bell pepper cut into thin strips
1 medium onion thinly sliced
1 Tbsp fresh lime juice
8 large romaine lettuce leaves
1 cup fresh salsa (I made pico de gallo - recipe below)
lime wedges for garnish optional
1. combine chili powder, salt, cumin, garlic powder and 1 tsp oil in large ziploc
2. add chicken, bell pepper and onion; mix gently to coat
3. heat remaining 1 tsp oil in large nonstick skillet over medium-high heat
4. empty contents of bag into skillet; cook stirring frequently for 5-6 minutes or until chicken cooked thoroughly
5. remove from heat; add lime juice
6. evenly top into lettuce leaves with chicken mixture and top with salsa/pico
For the pico:
1/2 onion, chopped
2-3 roma tomatoes
chopped handful of cilantro, chopped (as much as you like)
juice of one lime (we like lots of lime, so we add more!)
salt and pepper to taste
*Feel free to add more or less of each ingredient depending on your preference. Some people like to add garlic powder, green pepper, jalapeños (I don't like heat so I don't add those!)
