Crockpot Kielbasa & White Bean Soup
6 servings (1 serving = 1 - 1 ½ cups)

Ingredients:
2 tablespoons olive or coconut oil
1 package smoked turkey Kielbasa, thinly sliced
3 cloves garlic, minced
1 onion, diced
1 bag matchstick carrots
2 (15-ounce) cans Great Northern beans, drained and rinsed
1 can diced tomatoes, drained
1/2 teaspoon dried oregano
4 cups chicken broth plus 2 cups water
salt and pepper to taste
3 cups baby kale, chopped
Instructions:
*If sausage is already cooked like mine, skip step 1*
Heat oil in a large skillet over medium high heat. Add sausage, and cook, stirring frequently, until lightly browned, about 3-4 minutes.
Place sausage, garlic, onion, tomatoes, carrots, beans and oregano into a 6-qt slow cooker. Stir in chicken broth and 2 cups water until well combined; season with salt and pepper, to taste.
Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours. When ready to eat, stir in baby kale until wilted, and enjoy!
