Beef Taco Bowls

Have you ever made your own taco seasoning? It's actually pretty simple. You probably already have all of the spices in your cupboard, and you have control and know exactly what is going in your food. (If you've ever looked at the nutritional info on those packets, you know there is some unnecessary junk in there.) 😮 We made beef taco bowls last night with this homemade seasoning and a secret ingredient that brought our veggie count up for the day and kept our carbs low: cabbage! It might sound questionable, but you couldn't taste it and it gave it a nice crunch. Check it out!

Beef Taco Bowls

4 servings

21 Day Fix Container Counts: 1 serving = 1 Red, 1 Green, 1 Blue (if adding cheese OR guacamole)

Ingredients:

1lb lean ground beef

1/2 onion, chopped

salt and pepper to taste

12oz coleslaw mix

1 recipe homemade taco seasoning:

  • 2-1/2 teaspoons chili powder

  • 3/4 teaspoon cumin

  • 1/4 teaspoon salt

  • 1/4 teaspoon regular or smoked paprika

  • 1/4 teaspoon pepper

  • 1/8 teaspoon garlic powder

  • 1/8 teaspoon onion powder

  • 1/8 teaspoon red chili pepper flakes

  • 1/8 teaspoon dried oregano

1/4 cup chicken/beef broth or water

Optional toppings/add-ins: guacamole, salsa, green onions, shredded cheese

Directions:

  1. Brown ground beef with onion, and a dash of salt and pepper, in a large skillet over medium-high heat.

  2. Drain extra fat if necessary then return to the skillet.

  3. Add coleslaw mix, season lightly with salt and pepper, then saute until cabbage is tender, 3-4 minutes.

  4. Add taco seasoning and broth or water then mix to combine. Serve with toppings and add-ins.
