Crockpot Chicken Fajitas
Halloween night is always crazy, so I prepared by starting up some crockpot chicken fajitas when I got home from work around 3:00. After about 3 hours hours on high heat, they were ready to go! 👍 Super easy and very tasty!
Crockpot Chicken Fajitas
Makes approximately 5 servings (about 1 1/2 cups each)
21 Day Fix Containers per serving: 1 Red, 1 Green, 1 Yellow (if using 1 whole wheat tortilla or yellow container of brown rice)
Ingredients:
2 lbs boneless skinless chicken breasts
1 (14.5 oz) can of tomatoes with green chili peppers
2-3 green, red and/or yellow bell peppers, sliced in thin strips
1 large white onion, sliced in thin strips
2 cloves minced garlic
2 T of Homemade Taco Seasoning
Salt and pepper to taste
Optional toppings: fresh lime juice, Greek yogurt, avocado, cheese
Instructions:
1. Pour 1/2 can of tomatoes into the crockpot.
2. Top with 1/2 the bell peppers and onions. Sprinkle in garlic and add chicken breasts on top of veggies.
3. Season one side of the chicken breasts with 1/2 of the taco seasoning; flip and sprinkle remaining tablespoon over the other side of chicken.
4. Pour the rest of the tomatoes and veggies over top the chicken.
5. Cover and cook on low heat for 6 hours or on high for 3-4.
6. Remove chicken and cut into strips or shred.
7. Serve in warmed tortillas (or eat alone) - you can ladle out some of the broth if your fajitas are too soupy. You could also make a fajita bowl using brown rice as the base!
