Cauliflower Egg Cups
My daughter, Jayda, and I are off school today, so a little brunch was in order! 😎 Made these bad boys and they were yummy! They do take a little time, but they are so worth it!
Ingredients: ✔1 head of cauliflower, steamed ✔1/2 c. shredded Cheddar cheese ✔6 + 1 large egg ✔1/2 tsp. garlic powder ✔salt and pepper to taste ✔Green onion or chives, chopped (optional) Directions: 1. Preheat oven to 375° F. 2. Lightly grease 6 cups of a muffin tin and set aside. 3. Drop the steamed cauliflower into the bowl of a food processor and pulse until they start to resemble a fine grain. 4. Place the ground cauliflower onto paper towels and twist to wring out excess liquid. Do this up to three times until the cauliflower comes out completely dry. 5. Transfer dry cauliflower to a large mixing bowl. Add cheddar cheese, garlic powder, salt and 1 egg and stir to combine. 6. Distribute the mixture evenly throughout the muffin tins and use your fingers to press the mixture into the sides and bottom of each cup to form the nests. 7. Bake for 15-17 minutes or until brown. 8. Crack an egg on top and into the nest you have made. 9. Bake for an additional 7-8 minutes. 10. Sprinkle with chives and pepper to taste.
